Wild Berries Cake

Ingredients
 

Ingredients for the dough

  • 75 g Flour
  • 75 g Butter
  • 75 g Sugar
  • 2 Eggs
  • 1 packet Vanilla flavor

Ingredients for the cream

  • 1 pack Cream cheese
  • 1 bottle Rama Cremefine for whipping, or cream
  • 1 packet Cream stiffener
  • 1 packet Vanilla sugar
  • 2 tbsp Jam, I use cherry / poppy seeds

Berry topping

  • 1 pack Mixed berries, or just raspberries, whatever you like
  • 1 packet Red cake glaze
  • 250 ml Cherry juice

Instructions
 

  • Separate the eggs, beat the egg white until stiff, mix the other ingredients (+ egg yolks) with the mixer, then fold the stiff egg white underneath. Meanwhile preheat the oven to 160 degrees. Put the dough in a springform pan lined with baking paper and bake for about 40 minutes. Whip the cream with the cream stiffener until stiff, add the vanilla sugar and fold in the cream cheese. Brush the baked dough base with jam and distribute the creamy cream cheese mixture evenly and sprinkle the berries over it. Bring the cherry juice to the boil with the cake glaze and spread over the berries, let cool down - done!
