Brussels sprout mousse

Ingredients for 6 servings:

  • 1 kg Brussels sprouts
  • 2 eggs
  • ½ dl cream
  • Cumin powder
  • salt and pepper
  • Butter for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Winter side dish to fish or meat

Trim the Brussels sprouts and cook them in slightly salted water for about 20 minutes. Drain the water and puree the sprouts. Preheat the oven to 200°C and lightly butter a soufflé dish. Separate the eggs. Mix the egg yolks and cream with the Brussels sprout puree and season well with cumin, pepper, and salt. Beat the egg whites until stiff and fold them into the puree. Pour into the dish and bake in the oven for about 40 minutes until golden brown. Serve the fluffy mousse immediately.
