Bananas with macaroons

Ingredients for 4 servings:

  • 4 bananas
  • 400 g apples
  • 1 cup of cream
  • 100 g macaroons or amaretti biscuits
  • 3 tbsp sugar
  • Cherry brandy, 2 small glasses, approx. 5 cl
  • 1 lemon(s)
  • 30 g butter

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 220 degrees Celsius (425 degrees Fahrenheit). Peel the apples, cut them into chunks, and remove the cores. Cook the apple pieces with sugar and kirsch for a few minutes, then puree. Transfer the puree to a bowl and let it cool. Meanwhile, wash the bananas and remove the peels with two lengthwise slits, leaving eight intact halves. Slice the bananas. Squeeze the lemon, strain the juice, and drizzle it over the banana slices to keep them fresh. Stir the unwhipped cream into the apple puree. Grate the macaroons or amaretti biscuits. Grease a baking dish with 10g of butter and place the eight banana peels in it. Spoon some apple puree into each bowl and arrange the banana slices on top. Sprinkle everything with macaroons or amaretti biscuits and knobs of butter. Bake the bananas in the oven until golden brown and serve.
