Pasta piccante with crispy garlic croutons

Ingredients for 4 servings:

  • 6 tbsp olive oil
  • 4 small onions
  • 150 g diced ham
  • 3 tsp chili flakes
  • 1,000 g tomato(s) , from the can
  • 500 g pasta (large shell pasta)
  • salt and pepper
  • 6 slices of toast
  • 170 g butter
  • 4 cloves garlic

First, fry the finely chopped onions and ham in a pan with hot olive oil, stirring frequently. Now add the tomatoes (with juice) and chili flakes, and remove the tomato stems (simply remove them with a spatula or spoon). In the meantime, cook the pasta until al dente and let the sauce reduce. Season with salt and pepper. For the garlic croutons, chop the slices of toast in a blender and melt the butter in the pan. Now fry the toast crumbs and chopped garlic in the butter until golden brown (be careful not to burn). Arrange the pasta on a plate, pour the sauce over it, and scatter the still-warm breadcrumbs on top.
