Franconian Bruschetta

Ingredients for 4 servings:

  • 4 tomatoes, diced
  • 100 g bacon, diced
  • 1 small onion(s), finely diced
  • 1 garlic clove(s), finely chopped
  • 2 tbsp chives, chopped
  • 1 tsp basil, chopped
  • 8 tbsp olive oil
  • salt and pepper
  • 8 slices of farmhouse bread or ciabatta

Working time approx. 20 minutes; Total time approx. 20 minutes

delicious with fried bacon cubes and chives – best served on farmhouse bread

Wash the tomatoes and dice them into small cubes, as small as you like. Place them in a bowl. Fry the bacon in a pan until crispy and add it to the tomatoes. Finely chop the onion and garlic and add them. Add the chives and basil, as well as the olive oil. Mix well and season with salt and pepper. Bake the bread in the oven until nice and crispy, about 5 minutes at 200°C. Remove and top with the tomato mixture. Simply enjoy. It tastes best on farmhouse bread—our little one loves it!
