Ingredients for 3 servings:

  • 1 kg potato(s), floury
  • e.g. potato flour
  • 2 eggs
  • Salt
  • Fat (pork fat) for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Potato noodles – an old Bavarian family recipe

Boil the potatoes, peel them, and press them through a ricer while they’re still hot. Knead the cooled potato mixture with eggs and salt. Add potato flour if the dough is too thin. Render the fat in the roasting pan (a generous amount is enough). Form thumb-thick rolls the width of the pan and place them side by side. Bake for 45 minutes at 200°C (400°F) until a nice brown crust forms. Tastes great with roasts, but also with compote or sour cream.
