Pasta with blueberries and feta

Ingredients for 4 servings:

  • 15 stalks of basil
  • 2 cup(s) peanuts, chopped
  • 150 ml olive oil
  • 2 cup(s) blueberries
  • 1 tsp lemon juice
  • e.g. salt and pepper
  • 500 g pasta (fettuccini)
  • 150 g feta cheese, diced
  • 2 tbsp blueberries

Working time approx. 25 minutes; Total time approx. 25 minutes

something special and extraordinary

Wash the basil, shake dry, and pluck the leaves from the stems. Purée the leaves with 1 cup of peanuts, olive oil, 2 cups of blueberries, and lemon juice. Season with salt and pepper. Cook the pasta in salted water according to the package instructions until al dente. Drain and immediately toss with the pesto. Fold in the feta cubes, remaining peanuts, and blueberries, and garnish with some basil. Serve while still hot.
