Ingredients for 4 servings:

  • 4 apples (Boskoop)
  • 50 g raisins
  • 30 g butter
  • 1 tsp sugar
  • 125 g white wine
  • 40 ml Calvados
  • Cinnamon
  • 125 ml milk
  • 1 vanilla pod(s)
  • 2 egg yolks
  • 40 g sugar
  • 4 tsp cream
  • 2 egg whites

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and core the apples, fill them with raisins, and sauté them in a saucepan with white wine, butter, and sugar until softened and syrupy. Then stir in a little cinnamon. Vanilla sauce: Halve the vanilla pod, scrape out the seeds, and bring both to a boil with the milk. Whisk the egg yolks, sugar, cream, and a little milk together, stirring constantly, and pour into the simmering vanilla milk. Bring to a boil briefly. Strain through a sieve and fold in the stiffly beaten egg whites. Arrange the apples on plates with the vanilla sauce as a mirror, then pour over the flaming Calvados.
