Ingredients for 12 servings:
- 2 m.-sized apples
- 80 g almonds
- 50 g raisins
- 100 ml apple juice
- 1 vanilla pod(s)
- 150 g butter, soft but not liquid
- 100 g sugar
- 2 m.-sized eggs
- 220 g flour
- 1 tsp cinnamon, level
- 150 ml milk
- 1 tsp baking powder
- some powdered sugar

Fruity muffins with baked apple flavor
Baked apple muffins are a perfect recipe for the time between apple harvest and Christmas. They taste delicious and are quick to prepare. 1. Pour the apple juice and raisins into a saucepan, heat briefly, and remove from the heat. 2. Cut the apples into approximately 5 mm pieces. 3. Heat a tablespoon of butter in a pan, add the chopped almonds and apple pieces, and fry for 2-3 minutes, stirring occasionally. Then remove from the heat. 4. Split the vanilla pod lengthwise with a sharp knife and scrape the seeds from both halves. 5. Add the sugar, cinnamon, and vanilla seeds to the softened butter in a bowl and mix with the whisk of a mixer until creamy. Meanwhile, beat in the two eggs one at a time. 6. In another bowl, add the baking powder to the flour and mix both together. 7. Place a sieve over the bowl containing the previously prepared creamy mixture and sift in the flour mixture. Then pour in the milk and quickly mix everything with a wooden spoon until you have a smooth batter. 8. Drain the soaked raisins, add them to the apple and almond mixture, and mix everything together. Add half of them to the batter and fold in. 9. Line the holes of a muffin tin with paper cases and fill with the batter. The holes should be about three-quarters full. Spread the second half of the apple, almond, and raisin mixture on top. 10. Bake the muffins at 180 degrees Celsius (350 degrees Fahrenheit), fan oven 160 degrees Celsius (320 degrees Fahrenheit), for 25 to 30 minutes. 11. Let cool and dust with powdered sugar. 12. Done.
