Chocolate tiramisu

Ingredients for 4 servings:

  • 110 g white chocolate
  • 4 tbsp coffee, strong (espresso), cold
  • Liqueur (coffee liqueur)
  • Cocoa powder for dusting
  • 1 bar of dark chocolate, 70%
  • 110 g sugar
  • 4 eggs
  • 50 g butter, melted
  • 85 g flour
  • 30 g cocoa powder, unsweetened
  • 500 g mascarpone
  • 70 g sugar
  • 2 egg yolks
  • 100 ml wine (Italian liqueur wine)

Instructions

Working time approx. 35 minutes; Rest time approx. 15 hours; Total time approx. 15 hours 35 minutes

First, prepare the sponge cake. Preheat the oven to 180 degrees Celsius. Beat together the sugar and eggs until a firm cream forms. Fold in the melted butter, then carefully mix in the flour and cocoa powder. Pour the sponge cake mixture onto a greased baking sheet, spread it out, and bake in the preheated oven for ten minutes. When it’s ready, remove from the oven and let it cool. For the filling, put the mascarpone, sugar, egg yolks, and Italian fortified wine (e.g., Vin Santo) in a bowl and stir until a smooth cream forms. Carefully melt the white chocolate in a bain-marie. Place the sponge cake in a shallow dish, drizzle with the coffee and coffee liqueur, and pour the white chocolate evenly over it. Spread the mascarpone filling on top and dust with cocoa powder. Using a large knife, carefully shave off shavings of dark chocolate towards the center and arrange them decoratively on the tiramisu.
