Rice patties

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 tbsp butter
  • 250 g rice (risotto rice)
  • 500 ml vegetable broth, hot
  • 40 g cheese, grated
  • 4 tbsp mixed herbs
  • 3 egg yolks
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel and finely chop the onion, and fry it in a pan with the melted butter. Add the rice and sauté until light and fluffy. Pour in the hot broth and let the rice swell over low heat for about 20 minutes, stirring constantly. Add the cheese, herbs, egg yolk, salt, and pepper to the rice and mix. Then form the mixture into patties and fry in batches in heated oil until golden brown. Serve hot.
