Strawberry yogurt muffins from the air fryer

Ingredients for 1 servings:

  • 8 tbsp sunflower oil
  • 100 g sugar
  • 2 eggs, size M
  • 200 g Greek yogurt
  • 1 tsp lemon juice
  • 250 g wheat flour
  • 2 tsp baking powder
  • 1 packet of vanilla pudding powder
  • 1 pinch of salt
  • 1 bar of white chocolate
  • 200 g strawberries
  • some powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Mix the oil and sugar in a bowl. Add the eggs, yogurt, and lemon juice and mix. In a separate bowl, combine the flour, baking powder, pudding powder, and salt. Now add the wet ingredients and whisk until a smooth batter forms. Let the batter rest so it binds well. In the meantime, roughly chop the chocolate (this works best when well chilled) and hull the strawberries, then cut them into larger pieces or quarters. Fold two-thirds of the strawberries and the chocolate into the batter and spoon into 12 muffin cups. Arrange the remaining strawberries on top. Now bake the cakes in the air fryer at 160°C for 20 minutes (since mine only fit 6 cups, I did it in two batches, which was no problem). Let cool for about an hour. When the cakes are at room temperature, refrigerate them. Sprinkle with powdered sugar and serve.
