Clean the cauliflower, cutting deep into the stalk. Place the cabbage in heavily salted water for 15 minutes, bottom side up, to remove any pests. Bring the salted water to a boil, submerging the cauliflower halfway, and simmer on low heat for about 20 minutes. In a pressure cooker for about nine minutes. Meanwhile, set aside four slices of ham and dice the rest. Briefly fry the cubes in the butter, add the cream, add the cheese, and season with pepper, nutmeg, and salt if desired. Place the cauliflower on a platter, pour some of the sauce over it, and arrange the ham slices around the cauliflower. Serve the remaining sauce separately in a small bowl. We serve it with potatoes.
