Ingredients for 6 servings:

  • 1.4 kg mandarin orange(s)
  • 2 lemons
  • 800 g gelling sugar 1:1
  • 2 cinnamon sticks

Instructions

Working time approx. 15 minutes; Rest time approx. 1 day 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 day 55 minutes

Peel the mandarins and cut into small wedges. Cut the wedges, including the white pith, into pieces. Place the mandarin segments in a large saucepan. Squeeze the lemons, add the juice and preserving sugar, and mix everything together. Let the mixture steep for about 20 minutes. Purée the mandarin mixture with a hand blender. Then add the cinnamon sticks and let the mixture simmer for about 15-20 minutes. Prepare six 160 ml jars. Skim off some of the foam that forms, then fill the jars with jam and seal immediately. Let the jam stand for at least 24 hours.
