Baked chicory with ham and feta

Ingredients for 1 servings:

  • 1 small chicory
  • 1 tbsp butter
  • 1 tbsp oil
  • some salt and pepper, freshly ground
  • 1 pinch(s) of sugar
  • 2 slices of ham (e.g. Parma ham or Iberico) or bacon
  • some feta cheese
  • 2 tsp maple syrup

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Line a baking sheet with baking paper and preheat the oven to 200°C (top/bottom heat). Trim the chicory and cut it in half lengthwise. Sprinkle the cut sides with a pinch of salt, freshly ground pepper, and a pinch of sugar. Heat butter and oil in a pan and fry the chicory cut-side down for about 5 minutes, until the cut sides are lightly browned. Place the chicory cut-side up on the baking sheet and bake for about 10 minutes. Cut the ham (or bacon) into pieces and arrange them on top of the chicory, baking for a further 3-5 minutes. To serve, drizzle with a little maple syrup, sprinkle with some crumbled feta cheese, and grind some freshly ground pepper over the top. Serve hot as an appetizer or with some bread (e.g., for dinner).
