Pumpkin fritters

Ingredients for 4 servings:

  • 800 g pumpkin(s) with orange flesh
  • 2 eggs
  • 2 tbsp flour
  • salt and pepper
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Halve the pumpkin, scoop out the seeds with a tablespoon, remove the pumpkin skin, and coarsely grate the pumpkin flesh. Knead well with egg and flour and season with salt and pepper. Heat oil in a pan, add tablespoon-sized portions, and fry until crispy on each side for 3-4 minutes. Serve with herb quark or applesauce.
