Blackberries in brandy

Ingredients for 1 servings:

  • 1 kg blackberries
  • 250 ml water
  • 375 g sugar
  • 250 ml brandy

Instructions

Working time approx. 20 minutes; Rest period approx. 2 days; Total time approx. 2 days 20 minutes

Wash the blackberries, drain well and place in a bowl. Bring water with sugar to a boil, pour over the blackberries and cover. Let steep for about 24 hours. Place the fruit in a sieve and collect the juice. Bring the juice back to a boil and simmer until the liquid has reduced by ¼. Allow to cool. Place the blackberries back in a bowl, pour over the reduced juice and let steep for another 24 hours. Then place the blackberries back in a sieve and collect the juice. Place the blackberries in well-rinsed jars. Mix 250 ml of the juice with 250 ml of brandy and pour into the jars with the blackberries. Seal tightly and let steep for a few weeks.
