Amaretto plums

Ingredients for 1 servings:

  • 2 kg plums
  • 300 g sugar
  • 200 ml water
  • 400 ml Amaretto
  • 50 ml lemon juice

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 40 minutes

Makes 6 jars (350-370 ml each). Pit the plums, sprinkle with sugar, and let steep for 2-3 hours. Bring the plums to a boil with the water and simmer for 5 minutes. Add the Amaretto and lemon juice and bring back to a boil. While still hot, fill the prepared jars with the plums. Use either preserving jars with rubber stoppers or jars with twist-off lids. Due to their sugar content (the liqueur adds further sweetness), these plums will keep for at least a year without boiling in a water bath. Amaretto plums are delicious with ice cream, pudding, panna cotta, or simply on their own.
