Applesauce with elderflower syrup

Ingredients for 3 servings:

  • 500 g apples, e.g. Klarapfel or Boskoop
  • 2 tbsp lemon juice
  • 60 ml elderflower syrup
  • ½ cinnamon stick(s)
  • n. B. sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

A light dessert. Also delicious with semolina porridge or rice pudding.

Peel, core, and eighth the apples. Place the apples in a saucepan along with lemon juice, elderflower syrup, cinnamon stick, sugar (optional), and a tablespoon of water. Bring to a boil and reduce the heat to low. Simmer until the apples begin to break down. Remove the cinnamon stick and puree the apples with a hand blender. Transfer the applesauce to a bowl and add the cinnamon stick. Let cool.
