Vegetable rice pan with mettenden

Ingredients for 2 servings:

  • 4 Mettenden
  • 1 zucchini
  • 3 tomatoes
  • 2 bell peppers
  • 1 large onion(s)
  • 2 garlic cloves
  • 1 ½ cups rice
  • 3 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 1 bay leaf
  • salt and pepper
  • 1 tsp, crushed paprika powder, hot
  • 200 ml broth

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cut the mettenden sausages into slices. Roughly dice the peeled onion, zucchini, bell pepper, and tomato. Cook the rice according to the instructions. Heat the olive oil in a pan. Add the mettenden sausages and fry lightly. Add the onion, zucchini, tomato, and bell pepper to the pan and fry well. Add the stock and the bay leaf with the oregano and bring to a boil briefly. Add the cooked rice and continue to simmer over low heat. Add the tomato paste, paprika, salt, and pepper and mix everything well. Press the garlic through a press or mix in finely chopped. Season to taste with salt, pepper, and paprika. Tip: If you don’t like it too spicy, try sweet paprika.
