Palm heart omelette à la Didi

Ingredients for 4 servings:

  • 1 can of palm hearts
  • 4 m.-sized eggs
  • 1 tbsp clarified butter
  • 1 tsp pepper
  • 1 tsp salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Drain the hearts of palm and cut into slices approximately 5 mm thick. Fry the slices in a little clarified butter with a pinch of pepper and a pinch of salt in a pan. Remove the hearts of palm from the pan. Separate the eggs. Mix the egg yolks with pepper and salt and beat until frothy. Beat the egg whites until stiff peaks form and fold into the egg yolks. Fry a quarter of the egg in the pan on both sides until golden brown. Top one half of the omelet with a quarter of the hearts of palm and fold the other half over the top. Repeat with the remaining batter and the remaining hearts of palm. Plate up the omelets and serve.
