Steaks with salsa

Ingredients for 4 servings:

  • 1 bunch of spring onions
  • 500 g tomatoes
  • 1 mango(s)
  • 1 tsp honey
  • Salt
  • pepper
  • 1 lemon(s), the juice
  • 450 ml vegetable stock
  • 250 g couscous
  • 1 tbsp butter
  • 1 bunch arugula
  • 4 steaks (beef)
  • 2 tbsp oil (rapeseed oil)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash, trim, and finely chop the spring onions. Wash and deseed the tomatoes, and finely chop the flesh. Peel the mango, remove the stone, and also dice it finely. Mix the spring onions, diced tomatoes, and diced mango. Season with honey, salt, and pepper. For the couscous, squeeze the lemon juice. Bring the vegetable stock to a boil and stir in the couscous. Add the butter and let it swell for 5 minutes. Wash the arugula and trim the stems. Chop the leaves and stir them into the couscous with the lemon juice. Season the steaks with salt and pepper and fry in hot oil for about 3 minutes on each side. Arrange on plates with the salsa and couscous and serve.
