Rice and minced meat balls with potato wedges

Ingredients for 4 servings:

  • 200 g rice
  • 500 g minced beef
  • 1 m.-sized egg(s)
  • 1 medium-sized onion(s), finely chopped
  • 2 cloves garlic, finely chopped
  • some parsley, fresh or dried
  • 1 pinch(s) of salt and pepper
  • 1 pinch(s) nutmeg
  • 1 pinch(s) of paprika powder, hot
  • possibly sambal oelek
  • 6 m.-sized potatoes
  • 1 bag of spice mix, e.g. alnatura potato mix
  • some oil, e.g. olive oil

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cook the rice as usual. Meanwhile, peel the potatoes, cut them into wedges, and arrange them on a baking sheet. Spray them with olive oil and sprinkle with the spice mix. Alternatively, you can make your own spice mix using the following spices: salt, garlic powder, rosemary, paprika, parsley, oregano, thyme, and pepper. Place the minced meat in a bowl. Add the eggs, onions, garlic, spices, rice, and a little oil, and knead thoroughly. The rice doesn’t need to be cold; just enough so that you don’t burn your fingers while kneading. Don’t skimp on the spices, or the balls will taste nothing. If you like it spicier, you can also mix in some sambal oelek. Shape the mixture into balls about the size of ping-pong balls and place them on the baking sheet with the potatoes. Bake in the oven at 180°C (convection oven) for about 40 minutes. We like to serve this with a tomato and mozzarella salad.
