Lazy stew with chicken

Ingredients for 6 servings:

  • 400 g chicken breasts
  • 1 bell pepper(s), red
  • 1 zucchini
  • 1 onion(s)
  • 200 g tomato paste
  • ½ liter broth
  • 250 g noodles (vermicelli)
  • 200 g sour cream
  • 1 bell pepper(s), yellow
  • 1 bell pepper(s), green
  • some margarine or oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat some vegetable margarine or oil in a pan. Finely dice the chicken and fry. Peel and dice the onion, trim and dice the bell peppers. Trim and finely chop the zucchini. Add the vegetables to the pan with the meat and sauté briefly until translucent. Deglaze with the stock (I like to use Italian-flavored stock) and simmer over low heat for about 10 minutes. Add the vermicelli and simmer for another 3-5 minutes. Stir in the tomato paste and season to taste. Finally, fold in the sour cream. We like this with baguette or flatbread. Tip: If you like it a bit spicier, you can also add some sambal oelek.
