Medallions with rhubarb

Ingredients for 2 servings:

  • 50 g sugar
  • 25 g butter
  • 3 tbsp vinegar (apple cider vinegar)
  • 10 green peppercorns
  • 250 g rhubarb
  • 2 tbsp oil
  • 2 servings of pork medallions

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

If you only use rhubarb for desserts, you’ve missed something

Bring the sugar, butter, apple cider vinegar, and green peppercorns to a boil in a pan and cook for 5 minutes. Trim and dice the rhubarb. Add it to the pan and cook gently for 5-6 minutes. Season with salt and pepper and keep warm. Heat oil in a second pan. Salt the pork fillet and sear it in the hot fat for 5 minutes on each side over medium to high heat. Serve with the rhubarb.
