Nectarine jam from Simone

Ingredients for 4 servings:

  • 1,100 g nectarine(s), with peel
  • 400 g gelling sugar 2:1
  • 1 pack of citric acid

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 4 minutes; Total time approx. 1 hour 4 minutes

Pit and finely chop the nectarines, including the skin. Then puree the fruit in a blender and transfer it to a large pot. Add the gelling sugar and citric acid and bring to a boil. Let the mixture simmer for 4 minutes, stirring vigorously. Then pour the jam into jars and briefly turn them upside down. The jam is very fruity because I used less sugar.
