Ingredients for 1 servings:
- 1 tsp vegetable stock powder
- 150 g tomato juice
- 50 g white wine (e.g. Riesling), semi-dry
- 1 pinch(s) black pepper, freshly ground
- 1 pinch(s) nutmeg, freshly grated
- 300 g spare ribs (baby ribs), cut into meaty pieces
- 160 g mild sauerkraut (canned)
- 2 m.-large bay leaves
- 1 piece(s) cinnamon stick(s), approx. 8 cm
- 6 cloves
- 6 juniper berries, lightly squeezed
- 40 g white wine (e.g. Riesling), semi-dry
- 3 tbsp water
- 1 tsp vegetable stock powder
- 1 tbsp wheat flour
- 1 ½ tbsp lard
- Cooking water from sauerkraut
- 1 medium-sized garlic clove(s)
- 180 g potatoes, mainly waxy
- Salt
- 1 m.-sized tomato(s)
- 1 tbsp BBQ sauce, slightly smoky
- 1 tbsp cooking water from the spare ribs
Instructions

A menu of grilled baby ribs, boiled potatoes and sauerkraut
Combine the tomato juice and white wine with the spices in a saucepan and bring to a boil. Add the baby ribs and simmer with the lid on over moderate heat for 60 minutes. Remove from the pan, drain well, and grill until light brown all over. While the ribs are cooking, bring the sauerkraut, white wine, water, and all the spices to a simmer in a saucepan. Simmer gently with the lid on for 25 minutes, stirring occasionally to prevent burning. Then melt the lard in a small pan. Add the flour and fry until light brown. Gently squeeze out any cooking liquid from the cabbage and deglaze the flour with it, stirring continuously. Mix this back into the cabbage. Remove the bay leaves, cinnamon stick, cloves, and juniper berries from the sauerkraut. Mix the peeled and pressed garlic clove into the finished sauerkraut. While the cabbage simmers for 25 minutes, wash, peel, and trim the potatoes, then cut them into bite-sized pieces. Boil them in lightly salted water for 20 minutes until tender, then drain and keep warm. To garnish, slice the washed tomato. Place the sauerkraut, potatoes, and baby ribs on a serving dish. Mix the BBQ sauce with the cooking broth and pour over the grilled ribs. Garnish with the tomato slices, serve, and enjoy.
