Nectarine mango jam

Ingredients for 1 servings:

  • 750 g nectarine(s), pitted and weighed
  • 250 g mango(s), peeled
  • 500 g gelling sugar 2:1
  • 1 tsp lemon zest

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 24 minutes

Pit and finely chop the nectarines. Peel the mango, remove the flesh from the pit, and finely chop it. Purée the fruit mixture until smooth, if desired. Add the lemon zest and preserving sugar and bring to a boil, stirring occasionally. Let the mixture simmer for 4 minutes. Then immediately pour into prepared jars while still hot and seal tightly.
