Plum cake with potato dough

Ingredients for 1 servings:

  • 750 g plums
  • 150 g potatoes (net weight)
  • 200 g flour
  • 10 g baking powder
  • 125 g sugar
  • 50 g hazelnuts, grated
  • 100 g butter flakes
  • 1 packet of vanilla sugar
  • 1 drop of almond oil
  • 1 pinch of salt
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Boil the potatoes the night before and let them cool. Mash the peeled potatoes with a ricer or alternatively with a fork (similar to mashed potatoes). Place all the dough ingredients in a bowl, knead well with your hands, and work into a firm dough. Then spread evenly into a greased baking dish. Press the dough up slightly at the edges to give the cake a nice crust. Pit the plums and quarter or halve them. Arrange them in rings on the dough, working from the outside in. Bake in a preheated oven at 230°C (top/bottom heat) for approx. 35-40 minutes.
