Creamy vanilla pudding with cinnamon plum compote

Ingredients for 4 servings:

  • 1 jar plum(s), approx. 400 g drained weight
  • 4 tbsp sugar
  • 1 tsp cornstarch
  • 1 packet of vanilla pudding powder for cooking
  • 400 ml milk
  • 100 g whipped cream
  • 1 tsp cinnamon

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 30 minutes

For the compote, drain the plums in a sieve, drain well, and collect the juice. Briefly bring the juice to a boil with the cinnamon and 1 tablespoon of sugar. Thicken the cornstarch with 2 tablespoons of water and simmer in the juice for 1 minute, stirring constantly. Then add the plums and remove the compote from the heat. Mix the custard powder with 3 tablespoons of sugar and 100 ml of milk until smooth. Bring the rest of the milk and cream to a boil and add the mixed custard powder. Simmer the pudding for 1 minute, stirring constantly, then remove from the heat and let cool slightly, stirring occasionally. Divide some of the compote between four glasses and pour the pudding on top. Chill the dessert for at least 2 hours. Spoon the rest of the compote on top before serving.
