Ingredients for 4 servings:
- 1 jar fish(s) (sour herring)
- 3 m.-sized onion(s)
- 2 m.-sized apples
- 4 gherkins
- 375 ml whipped cream
- 3 tbsp lemon juice
- some salt and pepper
- 1 bay leaf
- 5 juniper berries
Instructions
Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes
Remove the herring from the jar, drain well, and then cut into pieces. In a larger bowl, combine the cream and lemon juice. Peel the onions and slice into rings. Wash, peel, quarter, core, and dice the apples. Slice the gherkins. Add the herring, onions, apple pieces, and cucumber slices to the bowl. Season with salt and pepper and stir to combine. Chop the bay leaf and place it in a tea strainer along with the juniper berries. Hang the tea strainer in the bowl and cover with cling film. Let the herring steep in a cool, dark place or in the refrigerator for 24 hours. Remove the tea strainer before serving, adjust seasoning if desired, and stir well again. Boiled potatoes are a good side dish.
