Baked zucchini

Ingredients for 4 servings:

  • 3 tsp butter
  • 500 g zucchini
  • 100 g cheese, grated
  • 50 g mayonnaise
  • 50 g sour cream
  • 1 m.-sized onion(s)
  • ½ bell pepper(s), yellow
  • 2 large eggs
  • some salt and pepper
  • 4 tbsp breadcrumbs
  • some butter or margarine for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Wash the zucchini, trim the ends, and slice. Peel and finely dice the onion. Wash the bell pepper, remove the seeds and white core, and dice. Preheat the oven to 175°C (top/bottom heat). Grease a suitable casserole dish. Melt a teaspoon of butter in a pan and fry the zucchini slices until just tender. Whisk together the two eggs. In a bowl, whisk together the cheese, mayonnaise, sour cream, onion, bell pepper, and eggs. Season generously with salt and pepper. Add the zucchini slices and toss to coat. Pour the mixture into the greased casserole dish. Mix the remaining butter with the breadcrumbs and spread over the zucchini mixture. Bake in the oven on the middle rack for about 30 minutes. Serve with tagliatelle pasta.
