Herring salad with salted herring

Ingredients for 10 servings:

  • 15 salted herring(s) (not matjes!), not pre-soaked
  • 10 eggs
  • 3 cups of cream
  • 2 jar Miracel Whip, large jar
  • 10 apples, sour
  • 1 jar capers
  • 8 onions
  • 1 jar pickle(s), large jar
  • 1 ½ rings of sausage (meat sausage or similar)

Instructions

Working time approx. 1 hour 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 1 hour 30 minutes

Soak the salted herring for about 30 minutes. Longer, depending on your taste. Change the water several times. Hard-boil the eggs. Cut all ingredients, except the capers, into small cubes. Place them in a large bowl along with the capers. Dilute the Miracle Whip with a little cucumber juice. Season with pepper and pour over the ingredients. Salt isn’t needed, as the salted herring will be used. Finally, add the cream. Mix everything together. Let it sit for at least a day and season with pepper if desired.
