Ingredients for 1 servings:

  • 300 g flour
  • 60 g sugar
  • 2 egg yolks
  • 180 g butter
  • 100 g marzipan paste
  • 50 g chopped pistachios
  • 3 drops of flavoring (orange flavoring or bitter almond oil)
  • 150 g nougat, firm to slice
  • 50 g dark chocolate

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 15 minutes; Total time approx. 3 hours 45 minutes

Cookies with nougat filling. Makes about 60 cookies

Knead the flour, sugar, egg yolks, butter, marzipan, flavoring, and pistachios into a dough. Shape the dough into rolls about 2-3 cm thick and chill them for about 2-3 hours. Cut the rolls into 1/2 cm thick slices and place them on a baking sheet lined with baking paper. Bake the cookies in a preheated oven at 200°C (top/bottom heat) for about 10-15 minutes. Allow the cookies to cool completely. Spread the bottom of half of the cookies with slightly warmed nougat and sandwich them together with another cookie. To decorate, chop the chocolate and melt it in a bain-marie (or on the lowest setting in the microwave). Fill a very small piping bag or paper bag with the chocolate coating and pipe it over the cookies using quick, striped movements. Allow it to dry thoroughly.
