Meat sausage in paprika cream

Ingredients for 4 servings:

  • 500 g meat sausage
  • 50 g margarine
  • 3 onions
  • 500 g tomatoes
  • 3 bell peppers
  • ¼ liter broth
  • 500 g potatoes
  • 75 g crème fraîche
  • 1 tbsp cornstarch
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Slice the sausage. Finely chop the onions. Blanch the tomatoes in boiling water, peel them, and cut them into strips. Peel the potatoes and cut them into small cubes. Clean and wash the bell peppers, halve them, remove the seeds and white parts, and cut the peppers into pieces. Heat the margarine and sauté the onions until translucent. Add the tomato strips and pepper pieces and simmer briefly. Add the potatoes, pour in the stock, and simmer over low heat for about 10 minutes. Add the sausage, bring everything to a boil, and thicken with cornstarch mixed with water. Finish with crème fraîche and season again with salt and pepper.
