Ginger-apple compote with wine

Ingredients for 12 servings:

  • 2 tsp cornstarch
  • 1 small lime(s) or lemon, organic
  • 1 tsp liquid sweetener
  • 150 ml wine, red or white
  • 150 ml apple juice
  • 3 m.-sized apples, sour ones, e.g. Boskoop or pears
  • 25 g ginger, fresh, peeled

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

great with chocolate cake or ice cream

Finely grate the zest from the lime and juice the fruit. Also save the empty zest and set aside. Slice the ginger. Mix 4-5 tablespoons of the wine with 2 teaspoons of cornstarch and set aside. Mix the lime juice, lime zest, lime zest, ginger, the remaining wine, apple juice, and sweetener and simmer gently over medium heat for about 10 minutes. Then turn off the heat and let stand for another 10 minutes. Strain the juice through a sieve and lightly thicken with the starch-wine mixture. Peel and slice the apples, then simmer briefly in the liquid, taking care not to overcook the apples. Set aside and let cool. Tastes delicious with ice cream or chocolate cake.
