Baked quinces

Ingredients for 4 servings:

  • 4 m.-large quince(s)
  • 600 g sugar
  • 200 ml lemon juice
  • ¼ liter of wine (Weißherbst)
  • 1 stalk(s) cinnamon
  • 5 carnations
  • Butter for the baking tray
  • ½ liter of water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the quinces thoroughly and rub off any fuzz with a brush or cloth. Halve the quinces and carefully remove the core. In a large saucepan, caramelize 400g of sugar until lightly browned. Add the wine, half a liter of water, the lemon juice, cinnamon, and cloves, and simmer for about 20-25 minutes (until the quinces are soft). Preheat the oven to 250°C and grease the baking tray. Place the quince halves cut-side up on the baking tray and drizzle with some of the liquid. Sprinkle the remaining sugar over the quinces and bake until golden brown.
