Ingredients for 4 servings:
- 1,000 g turkey schnitzel (6-8 slices)
- 2 garlic cloves, finely diced or pressed
- 1 large onion(s), finely diced
- 2 lemons, squeezed
- 3 tbsp olive oil, fine (first pressing)
- 5 tbsp balsamic vinegar
- 200 ml water, cold
- 4 tbsp tomato ketchup
- 4 tbsp mustard
- 2 tsp herbs de Provence
- 2 tsp herbal salt
- 1 tsp pepper
- 1 tsp curry
- 1 tsp sweet paprika powder
- 1 tsp coarse-grained sea salt
Instructions

Finely chop or press the garlic. Finely dice the onion. Squeeze the lemons and add the juice to the diced garlic and onion. Add the oil and vinegar and whisk well. (The oil should not have any grease spots.) Pour in the water. Stir in the ketchup and mustard. Now mix the sauce with the spices and herbs. Rinse the meat and pat dry, then lightly score it. Brush the first slice of meat on both sides with the marinade and place it in a bowl. Brush the following slices only on the top side, as the bottom, uncoated side will be placed on an already marinated slice. Pile the meat in the bowl. Finally, pour the remaining marinade over the meat and let it marinate, covered, in the refrigerator for 6-12 hours. Grill the meat.
