Pickled herring

Ingredients for 4 servings:

  • 500 g fish (matjes)
  • 2 onions
  • 2 tomatoes
  • 1 jar of pickled gherkins with broth
  • 1 tsp pepper, whole

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thinly slice the onions, tomatoes, and gherkins. Layer the vegetables and herring in a tightly sealed container, sprinkle with peppercorns, and pour over the gherkin broth. Let it all sit for 2-3 days. Serve the herring with the vegetables. I serve it with boiled potatoes.
