Matjes in curry cream

Ingredients for 8 servings:

  • 16 fish fillets (matjes fillet)
  • 4 tbsp lemon or lime juice
  • 2 bunch spring onions
  • 300 g crème fraîche or sour cream
  • 300 g yogurt (full-fat yogurt)
  • 150 ml milk or buttermilk
  • salt and pepper
  • 4 tsp curry powder
  • 3 tsp mustard
  • 3 apples, red
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the herring fillet into large pieces and add the lemon juice. Thinly slice the spring onions, quarter the apples, and slice them crosswise. Combine the crème fraîche, yogurt, and milk, then add the spices and mustard. Mix everything carefully, cover, and let it sit in the refrigerator. Season to taste before serving.
