Ingredients for 4 servings:

  • 4 fish fillets, double matjes fillets
  • 2 small onions, white
  • 2 small onions, red
  • 2 apples, sour
  • 4 gherkins
  • 2 cups sour cream
  • 1 cup sour milk
  • 1 cup of crème fraîche or sour cream
  • Juniper berry(s)
  • Pepper from the mill
  • bay leaves
  • clove(s), to taste

a Franconian favorite dish!

Whisk together the sour cream, curd, and crème fraîche. Finely chop the onions and cucumbers, dice the apples slightly larger, and add them to the cream and curd mixture along with the spices. Finally, fold in the herring fillets, cut into bite-sized pieces, cover, and let marinate in a cool place for a few hours, preferably overnight. This goes best with boiled potatoes, but also with baked potatoes or good farmer’s bread. For the marinade, you can adjust the sour cream, curd, and crème fraîche according to taste or what you have on hand.
