Gnocchi with zucchini and spinach cream cheese

Ingredients for 2 servings:

  • 250 g leaf spinach
  • 1 large zucchini
  • 120 g cream cheese
  • 1 pack of gnocchi
  • salt and pepper
  • some oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wash the zucchini and cut into small pieces. Meanwhile, heat a little oil in a pan and bring water with a little salt to a boil in a pot for the gnocchi. Lightly fry the zucchini pieces in the pan. Also finely chop the spinach and add it to the pan. Once the spinach has wilted, add the cream cheese and mix everything together. Season with pepper and salt to taste. Cook the gnocchi in the boiling water for 2-3 minutes. Then drain and fry briefly in another pan until crispy. Finally, add the gnocchi to the pot with the spinach, zucchini, and cream cheese sauce and mix everything well.
