Ingredients for 1 servings:

  • 150 g mushrooms
  • 2 shallots
  • 3 tbsp oil
  • 1 tsp tomato paste
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

finely chopped and fried mushrooms

Clean and finely chop the mushrooms, and finely dice the shallots. Heat the oil in a pan and fry the mushrooms until crisp (don’t stir or shake too much, or they’ll absorb a lot of water). Then add the shallots and fry for about 2 minutes. Stir in the tomato paste and fry until the liquid has evaporated. Season with salt and pepper. Remove from the pan and toss with the chopped parsley.
