Ingredients for 4 servings:
- 12 salted herring
- 3 m.-sized apples
- 5 m.-large gherkins
- 5 m.-sized onion(s)
- 1 liter of milk
- 500 ml Miracle Whip balance
- capers
- pepper
- Sugar
- Vinegar

Salted herring recipe, for example, as a pick-me-up for the New Year
Rinse the salted herring and soak it in water slightly acidified with vinegar for at least 12 hours. Then cut the herring open, clean it, remove the central bone, and divide it in half. Once you have both fillets, pull out the fine bones and finally peel off the skin. If the fillets are still too salty, soak them in water with a light vinegar solution for another 6 hours. Then, if necessary, pull out any small bones. These are then added to the marinade. Marinade: Blend 1 liter of milk with 500 ml of Miracle Whip, about 1 teaspoon of pepper, 1 1/2 tablespoons of sugar, and vinegar to taste using a hand blender. Do not add salt, as the herring is salty! It should taste truly sweet. Peel the apples, cut them into wedges, and cut them into thin slices. Peel the onions, cut them into thin rings, and cut the cucumbers into thin slices. Mix the herring fillets, apples, cucumbers, onions, and capers thoroughly and pour the marinade over them. Let it marinate for at least 6 hours, preferably the night before, and enjoy it the next day with boiled potatoes.
