Ingredients for 4 servings:
- 2 egg whites
- 150 g sugar
- 1 organic lemon(s), zest and juice
- some lemon thyme
- 200 g almonds, ground, without skin
- some powdered sugar for dusting

Protein utilization, fast, tasty
Beat the egg whites with the lemon juice until stiff peaks form. Gradually beat in the sugar. The egg whites should be shiny and the sugar should be completely dissolved. Finely chop the lemon thyme leaves and fold them into the beaten egg whites along with the lemon zest and almonds. Line a baking sheet with baking paper and place small heaps of the mixture onto the sheet using two teaspoons or a piping bag. Bake in a preheated oven at 140°C (top/bottom heat) for about 40 minutes, longer than baking. Sprinkle with powdered sugar to serve.
