Ingredients for 1 servings:
- 175 g butter, soft
- 120 g sugar
- 120 g brown sugar
- 1 egg(s), beaten
- 3 m.-sized banana(s), crushed
- 1 tsp butter-vanilla flavoring
- 250 g flour
- 1 tsp baking powder
- 175 g chips (banana chips), crumbled
- 50 g desiccated coconut

Cream the butter and sugar until fluffy, gradually adding the egg. Stir in the remaining ingredients thoroughly and let the dough rest in the refrigerator for at least 2 hours. Preheat the oven to 190°C. Line 2 baking sheets with parchment paper. Shape the dough into balls, one tablespoon at a time. Press down lightly and place them on the baking sheets, leaving at least 5 cm between each. Bake the cookies for 18-20 minutes until golden brown, then let them cool on a wire rack.
