Baked turkey rolls with zucchini

Ingredients for 3 servings:

  • 3 large turkey schnitzels
  • 250g mozzarella
  • 6 slice(s) smoked ham
  • 12 black olives
  • 1 half onion(s)
  • 1 clove(s) garlic
  • 1 m.-large zucchini
  • 2 tomatoes
  • 1 tbsp tomato paste
  • some water
  • 2 handfuls of cheese, grated
  • salt and pepper
  • Paprika powder, hot
  • rosemary
  • chili powder
  • olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Flatten the turkey cutlets with a meat tenderizer and cut them in half crosswise. Season with salt, pepper, and hot paprika. Slice half of the mozzarella and top the turkey cutlets with them. Add two olives to each roll and roll them up. Wrap a slice of smoked ham around the turkey roll and secure it with toothpicks, for example. I used three toothpicks per roll to prevent any falling out. Preheat the oven to 180°C (convection oven). Grease a baking dish with olive oil, place the turkey rolls in it, and place in the oven for 10 minutes. Dice the onion and sauté in a pan with olive oil. Dice the zucchini and tomatoes, add them to the onions, and season with chopped garlic, tomato paste, salt, pepper, rosemary, and chili. Add a little water if desired and let it simmer for a few minutes. Meanwhile, slice the remaining mozzarella. Remove the turkey rolls from the oven, add the zucchini and tomato mixture, top with the mozzarella slices, and sprinkle with grated cheese. Then return the casserole dish to the oven for another 20 minutes. We served it with salad and croquettes. The croquettes can be placed in the oven along with the casserole dish.
