Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 4 m.-large mushrooms
  • 100 g cream cheese
  • Fresh herbs (thyme, rosemary, etc.)
  • salt and pepper
  • 100 g cheese, grated

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

vegetarian stuffed zucchini

Halve the zucchini and scrape out the excess liquid (this works best with a teaspoon). Finely chop the scraped zucchini mixture and place it in a bowl. Clean the mushrooms and cut them into small cubes. Add the cream cheese, season with herbs, pepper, and salt, and mix well. Fill the zucchini halves, sprinkle with cheese, and bake in the oven at 200°C (400°F) for 30 minutes.
