  • Chili pepper(s), hot to mild
  • Acacia honey

Instructions

Clean the chili peppers, halve them lengthwise, and remove the seeds. Cut the peppers into very small, fine cubes and place them in a jar. Because of the spiciness of the chili peppers, be sure to wear disposable gloves when preparing them. Fill the jar with acacia honey until the chili pieces are covered. Please use only acacia honey, as it does not crystallize. The jar can be continually refilled with more freshly harvested, ripe chili peppers until it is full. This makes it easy to portion the pickled chili peppers, and the honey makes them go well with everything. Once pickled, they will keep easily in the refrigerator until the next chili season.
