Rosemary chops

Ingredients for 4 servings:

  • 4 pork chops
  • 40 g clarified butter
  • 3 cloves garlic
  • 1 sprig(s) rosemary
  • 1 tsp sweet paprika powder
  • 1 pinch of hot paprika powder
  • 1 tsp peppercorns
  • 3 allspice berries
  • 30 g flour

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Rinse the chops and pat them dry. Then lightly tap them. Preheat oven to 180 degrees Celsius. Crush the peppercorns and allspice berries in a mortar and pestle. Mix both types of paprika powder with the ground spices. Rub the spices into the chops. Sift flour into a deep plate and flour both sides of the chops to give them a nice crust. Heat a grill pan with the clarified butter. Sear the chops on both sides. Lightly crush the garlic and add it along with the rosemary. Place the grill pan in the oven and bake the chops for 20-30 minutes, depending on their thickness.
